Sauvignon Blanc is one of the world’s most unique grapes. Rich with fragrant treasures, it is an aromatic ecstasy of flowers, wild fennel, citrus and tropical fruit.
Its unmistakable aroma makes you love it immediately and the warm pleasantness has earned it a strong backing of admirers. The roots, infiltrating the tiny cracks of the land along the Buttrio hills, saturate themselves of a mineral supply of extraordinary character, and its charm vibrates of hints of honeysuckle and white peach.

Alternate layers of marl and sandstone of Eocene origin, known as “ponca” in Friulian
Vineyard sites:
Hillslopes, terraced for improved vineyard management
Site climate:
The location in the hills at Castello di Buttrio, 142 metres above sea level, ensures perfect air circulation and the ideal range of day-night temperatures at harvest time brings the grapes to optimal ripeness

Integrated low environmental impact management encourages the grapes to express the territory
Harvest period:
Decided on the basis of periodic grape tastings and monitoring of sugar, acidity and aromatic ripeness
Vinification:
Soft pressing with separation of the press fractions. Settling at 14 °C for 24-36 hours. Fermentation in stainless steel tanks at a controlled temperature of 18-20 °C
Maturation:
For 6-8 months on the fermentation lees kept in suspension by periodic stirring
Release to market:
8-10 months after the harvest
Sensory profile:
Appearance: Straw yellow
Nose: Very aromatic yet elegant with distinctive yellow peppers, sage, tropical fruits, peach and melon
Palate: Full-bodied, gracefully contoured and velvet-smooth. Excellent structure and nicely gauged acidity
Food matchings:
Marvellous with crustaceans in general and scampi in particular, whether raw or gracing a plate of pasta alla busara. Ideal with lobster or spiny lobster however cooked, and as a partner for fish baked with Mediterranean herbs. Excellent with aromatic spring herb risottos
